Tasting Note: The organic 2019 Cabernet Sauvignon Mania shows good richness and concentration, and there is a healthy ruby shine to the appearance. The wine is not inky or impenetrable. This expression offers lots of varietal purity—you really bite into that Cabernet Sauvignon—with dark fruit and blackberry enhanced by spice and grilled rosemary. The wine is concentrated for sure, and it shows a good amount of fruit weight, without too much heaviness. Again, the tannins are a bit tart, but this is still a youthful, near-term drinking bottle. Just make sure to pair it with meat or rich foods.
