28 hectares of Chardonnay on fossil-rich Kimmeridgian limestone. From village appellations to the iconic Grands Crus, each plot reveals pure minerality, chalky tension, and an unmistakable sense of place.
Winemakings
No oak — only stainless steel fermentation. Extended sur lie ageing for 18–30 months (sometimes up to 8–10 years) with regular bâtonnage. Bottled without fining, filtration, or added sulfur, then cellared for another 6–12 months.
Philosophy
Organic viticulture, mechanical harvest, and zero intervention in the cellar. The goal: preserve the authentic voice of Chablis, building what the winemaker calls "wine's fat" — texture, aromatic persistence, and extraordinary aging potential.
