Winemaker Note: This great, exclusively white wine, owned by Charlemagne for part of his reign, is especially famous, in addition to its prestigious name, for its unparalleled quality, its great class, and its incredible longevity (over 20 years).

This powerful and full-bodied Grand Cru will stand alone for an exceptional tasting, but in its youth (2 to 3 years) it can royally accompany all noble cooked shellfish: lobster, crayfish, crab, etc. With a little maturity (4 to 5 years), where it still develops a great deal of depth, it will delight all palates (in both senses of the word) with the finest fine-fleshed fish in beurre blanc sauce (or even Armoricaine sauce), as well as veal and poultry in cream sauce. It's important to remember that thanks to its enormous potential and with good maturity (from 10 years), it can also easily replace a sweet wine to enhance a foie gras starter.
