This exclusive wine dinner features from Domaine Philippe Pacalet, a legendary estate in Burgundy, France. Host in Man’s Chiuchow Cuisine.

Founded in 2001 in Beaune, Burgundy, by Philippe Pacalet, a scion of a winemaking family with roots dating back to 1780 in Beaujolais, the estate is a pioneer of natural winemaking in the region. Pacalet apprenticed under the “father of natural wine” Jules Chauvet and spent a decade as winemaker at Domaine Prieuré Roch, one of Burgundy’s iconic estates. Instead of owning vineyards, he partners with carefully selected growers in the Côte d’Or, crafting wines from 7 Grands Crus and 15 Premiers Crus across iconic villages like Beaune, Vosne-Romanée, and Chambolle-Musigny.

True to its natural philosophy, the estate practices organic viticulture and uses indigenous yeast fermentation with minimal or no added sulfur dioxide, preserving the true character of the land and grapes. Its Pinot Noirs boast elegance and complexity, while Chardonnays shine with bright minerality and freshness—defining the pinnacle of Burgundian natural winemaking.
