Tasting Note: The 2016 Cornerstone Wilyabrup Cabernet Sauvignon sees a return to 20 months of barrel aging (the period of time between the 2007 and the 2015 vintage saw mainly 15 months of maturation in oak, with the exception of 2014, which saw 18 months), and yet the vintage has produced fruit that handles it with ease. Surprisingly, given the season, I find this wine to be quiet, contemplative and very restrained. The fruit is purple and spicy (blood plums, cassis, star anise, licorice, etc.) yet not exuberant. I recall having thought this about this vintage previously, so it is interesting to find it again here today. I'd hold on to this and not drink it for some time yet.
