The Winery

Philippe Pacalet, a celebrated winemaker in Burgundy, honed his craft under the guidance of his uncle, Marcel Lapierre, a pioneer in natural winemaking and worked for Domaine Prieure Roch for 10 years. Known for his minimal intervention approach, Pacalet produces elegant Pinot Noir and Chardonnay that capture the essence of their terroir. His commitment to organic practices and traditional methods results in wines of purity and complexity, distinguishing his winery in the region.

Aligoté has been planted in this plot of land in Puligny-Montrachet since ancient times as it has a lot of limestone. The vines are over 50 years old, so the yield is low, and the minerality typical of a limestone field and flint aroma are clearly reflected in the wine. Old barrique fermentation. Aged for 19 months. Avoid batonnage as much as possible.
